Ingredients
  

  • 3 pounds beef top round or sirloin roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 large onion sliced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon crushed red pepper flakes
  • 4 cups beef broth
  • 1 cup giardiniera or pepperoncini peppers
  • 6 French rolls
  • Salt and pepper to taste

Instructions
 

  • Pat the beef roast dry and season with salt and pepper.
  • Heat olive oil in a skillet and sear beef on all sides.
  • Transfer beef to a slow cooker and add garlic, onion, and herbs.
  • Pour in beef broth and cook on low for 8-10 hours.
  • Remove beef and shred with forks once tender.
  • Prepare giardiniera by draining excess liquid.
  • Preheat oven to 350°F and slice French rolls.
  • Assemble sandwiches with beef, giardiniera, and juices.
  • Toast sandwiches in oven for 5-7 minutes.
