- 3 pounds beef top round or sirloin roast
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 large onion sliced
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon dried thyme
- 1 teaspoon crushed red pepper flakes
- 4 cups beef broth
- 1 cup giardiniera or pepperoncini peppers
- 6 French rolls
- Salt and pepper to taste
