Preheat the oven to 400°F (200°C).
Dice potatoes, slice bell peppers and onion, and mince garlic.
Brown the sausage in a skillet with olive oil until caramelized.
Sauté onions and garlic in the same skillet until translucent.
Add bell peppers to the skillet and sauté until softened.
Combine sausage, potatoes, and vegetables in a baking dish.
Season with oregano, basil, salt, and pepper and toss.
Cover with foil and bake for 30 minutes.
Remove foil and bake for an additional 15 minutes.
Garnish with fresh parsley before serving.
