Ingredients
  

  • 4 large flour tortillas
  • 2 cups low-fat cottage cheese
  • 4 egg whites cooked and sliced (optional)
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1 small cucumber thinly sliced
  • ½ cup grated carrots
  • ½ red bell pepper sliced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine cottage cheese, garlic powder, paprika, salt, and pepper.
  • Add shredded lettuce, diced tomato, cucumber, carrots, bell pepper, and parsley to the cheese mixture.
  • Gently fold the vegetables into the cottage cheese until well combined.
  • Warm each tortilla in a skillet over medium heat for about 20 seconds on each side.
  • Lay a tortilla flat and spoon the cottage cheese and vegetable mixture onto the center.
  • Place cooked egg whites on top of the filling, if desired.
  • Fold the sides of the tortilla inward and roll it tightly from the bottom.
  • Repeat the assembly and rolling process for remaining tortillas.
  • Slice each wrap diagonally and serve immediately.
