Add shredded lettuce, diced tomato, cucumber, carrots, bell pepper, and parsley to the cheese mixture.
Gently fold the vegetables into the cottage cheese until well combined.
Warm each tortilla in a skillet over medium heat for about 20 seconds on each side.
Lay a tortilla flat and spoon the cottage cheese and vegetable mixture onto the center.
Place cooked egg whites on top of the filling, if desired.
Fold the sides of the tortilla inward and roll it tightly from the bottom.
Repeat the assembly and rolling process for remaining tortillas.
Slice each wrap diagonally and serve immediately.
