Ingredients
  

  • 16 oz 450g dark chocolate, finely chopped
  • 1 cup unsalted pistachios shelled and divided
  • 2 tablespoons unsalted butter
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon sea salt
  • ½ teaspoon ground cardamom or a pinch of saffron Optional

Instructions
 

  • Preheat oven to 350°F (175°C) and roast shelled pistachios for 5-7 minutes until fragrant.
  • Set up a double boiler and melt two-thirds of the chocolate with butter, stirring until smooth.
  • Remove from heat and add remaining chocolate, stirring until fully melted and glossy.
  • Stir in sea salt, vanilla extract, and optional cardamom or saffron for extra flavor.
  • Pour half of the melted chocolate into a lined baking dish and spread evenly.
  • Sprinkle roasted pistachios evenly over the chocolate layer.
  • Pour remaining chocolate over pistachios, spreading it evenly to cover.
  • Let the chocolate set at room temperature for 2 hours or refrigerate for 30-60 minutes.
  • Once set, cut into bars and serve.
