Ingredients
  

  • 1 lb cheddar cheese shredded
  • 1 lb Monterey Jack cheese shredded
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup cooked ground beef or turkey optional
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Preheat your smoker or pellet grill to 250°F (120°C).
  • Sauté onion and garlic in olive oil until translucent.
  • Combine shredded cheddar and Monterey Jack cheeses in a bowl.
  • Transfer sautéed onion and garlic to a skillet.
  • Add cheeses, tomatoes, meat, and smoked paprika to the skillet.
  • Smoke the mixture for about 45 minutes, stirring occasionally.
