- 1 pound 450g Asian eggplants, sliced into bite-sized pieces
- 2 tablespoons vegetable oil
- 4 cloves garlic finely minced
- 2 red chilies thinly sliced
- 1 medium onion sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon brown sugar
- 1 cup fresh Thai basil leaves
- Salt and pepper to taste
Slice the eggplants into bite-sized pieces and sprinkle with salt.
